The last we heard of Ishka farms was when they partnered with Indian farm-to-bar chocolate brand Paul and Mike on milk chocolate coated salted capers that won a gold at the 2024 International Chocolate awards. Based in Tamil Nadu, they're a fascinating study on doing business hand in hand with development and sustainability. They describe this Black Garlic & Caper spread as the show-stopper of their current condiment range, and we'd have to agree. Perfectly balanced to highlight the sweetness of fermented garlic with the piquant capers and caper salt from their farm, this umami, eggless 'aioli' works great on toast, cheeseboards, and sandwiches.
