To quote Sarah Edwards (a certified health coach, and the founder of Copper + Cloves, a popular Bangalore-based café), "Capers are an amazing ingredient —they are salty and tangy, and interesting."
Capers are the unopen flower buds (picked young and punchy), while caper berries are the fully grown fruit that develops after the flower petals fall off (milder, larger, and crunchier). While the youngest and smallest buds are typically the most intensely flavorsome, these 7mm to 9mm Surfine buds are allowed to stay on the plant just a little longer, which gives them a unique crunch, and makes them perfect for use as a concentrated flavour booster in Mediterranean recipes, pasta sauces, and warm dishes.
Ishka Farms has a 'Recipes' section on their website with a number of recipes that use capers as an ingredient, and and this recipe for Salsa Verde by Sarah Edwards from Copper + Cloves particularly caught our eye (and interest!) as one to add to our 'Must-Make' recipes list.
