Sungtache Hooman, or Kokum Prawn Curry Masala (Sungta meaning prawns and Hooman being the traditional Goan word for curry), is a coastal classic that captures the true soul of the Konkan. At its heart lies sun-dried and preserved kokum—the deep-purple fruit of the region’s coastal forests—which lends a mellow, fruity tang and iconic rosy hue that tamarind simply cannot match. Whisk it into fresh coconut milk to create an effortless Goan prawn or fish curry, and if you're vegetarian, we think this tangy, aromatic base could work equally beautifully with paneer, roasted cauliflower, or mushrooms!
